Can't seem to find a recipe thread, so here goes with my first offering.

Veggie Chilli
Serves 6-8

3/4 Cup Bulgar Wheat
2 Tblsp Olive Oil
1 Large Onion
2-3 cloves garlic
1 tsp Chili Powder
2 tsp ground cumin
1 tsp Cayenne Pepper
1/2 tsp ground cinnamon
2 x 400g cans crushed toms
750ml Veggie stock
2 x 400g cans Red Kidney beans
2 x 400g Chick peas
1 x Large can sweetcorn
2 tblsp Tom puree

Soak the bulgar wheat in 1 cup of hot water and stand for 10 mins, Heat the oil in a large (very large) saucepan and cook the onions till soft.

Add the garlic and spices and cook for another minute.

Add the stock and tomatoes and Bulgar wheat and bring to the boil and then simmer for 10 mins. Add the beans, peas and sweetcorn and tom paste simmer for 20 mins.

Serve, or I divide it into portions for lunch and freeze.
