Low GI baked... something

Righty ho people, I need a recipe for a baked product of some description (cake, biscuit, muffin, etc.) that you know works. I'm supposed to be compiling and analysing a low GI diet, and I want to put some sort of snack in there. But I'm stumped! Have trawled through the interweb with no joy - google has officially failed me. Damn them and their mafia owners!

So? Any recipes? Pretty pretty please??

Of course you can have healthy cake! Just depends what it's got in it  Alas, chocolate fudge cake does not count as healthy

I do like the sound of kidney bean brownies, I love kidney beans.

There is a Nigella cake that has whole cooked oranges in. I thought it was healthy but then I look at the amount of sugar, fat and ground nuts in it!

That Nigella recipe is fantastic! I made it last Christmas - the smell is amazing  Not one for the reasonably healthy list though...
