been trying out more vegan meals in my diet

- would be interested in any fav recipes people have (as I'm getting a bit bored with my stock ones - no pun intended)

top curry,

fry up some cinamon, 6 cloves, 6 cardamon in a big saucepan

add onions

add whatever veg's you choose, fry till tender

mix tsp turmeric, fresh chillies, garlic, ginger, squeezed lemon juice

fry a bit more (2 mins)

melt about half a creamed coconut bar (depends on your diet) in boiled water (quantity will determine consistency), season and add to the pan

simmer for 15-30mins or too taste


Serve with some basmati rice

get Madhur Jaffreys Eastern Vegetarian Cookery which is one of our reference books. she also has another one called World Vegetarian Cookery. obviously not all vegan recipes, but enough to keep you going (so to speak) for choice

PORRIDGE! food of the gods esp...

with a handful of raisins, a pinch of cinamon and a drop of flax seed oil (half water and half soya milk, of course!)

also Ratatoilli (sp?) and baked sweet potato.

chop onion, aubergine,mushrooms, carrots , red,green and yellow pepper and a corgette.

lightly fry the onion and peppers in a little olive oil 5 mins, add the other veg a clove of garlic and a tin of toms - simmer 20 mins

bake sweet pototato in the oven in its jacket

serve together, with a drizzle of sweet almond oil on the pot

Have a fantastic recipe for vegan chocolate cake somewhere, was the ultimate treat when I was a student. Although might be slightly wrong if veganism is for health.

How about :
spicy chickpeas

1 teaspoon each of : curry, ground coriander, chili powder, ground cumin, and paprika

1/2 teaspoon each of: ground allspice, salt, and cayenne pepper

Mix with cooked chickpeas

I cooked them in a 400 degree over for around 30 minutes and they were yummy!

Or : ---Apple Cinnamon Bars---

1 cup whole wheat flour

1/2 cup rolled oats

1 tablespoon ground cinnamon

1 teaspoon baking powder

1/4 cup brown sugar

2 eggwhites or 1 egg equivilent EnerG

1/2 cup soy or dairy milk

1/4 cup apple juice concentrate

1/4 cup raisins or craisins

about 1 1/4 cup chopped peeled appled



Soak the raisins in the apple juice concentrate for 30 minutes.

Spray 8" square pan with vegetable spray (or use non stick pan)

Stir together dry ingredients. Add apples and toss to coat. Stir together

all wet ingredients. Pour wet stuff into the dry, fold together just to

evenly moisten the dry ingredients. Spread this thick batter into the

prepared 8" pan, bake at 350 degreed F for 20 minutes.

I'm very sorry for tempting you, but it seems to have disapeared! I know it invloved malt extract at some stage! And usually a broken up bar of Maya gold.

Although you can just buy egg subsitute at health food shops and use that in a normal recipe.
