tasty recipes for vegan diet?

top curry,

fry up some cinamon, 6 cloves, 6 cardamon in a big saucepan

add onions

add whatever veg's you choose, fry till tender

mix tsp turmeric, fresh chillies, garlic, ginger, squeezed lemon juice

fry a bit more (2 mins)

melt about half a creamed coconut bar (depends on your diet) in boiled water (quantity will determine consistency), season and add to the pan

simmer for 15-30mins or too taste


Serve with some basmati rice

get Madhur Jaffreys Eastern Vegetarian Cookery which is one of our reference books. she also has another one called World Vegetarian Cookery. obviously not all vegan recipes, but enough to keep you going (so to speak) for choice

Have a fantastic recipe for vegan chocolate cake somewhere, was the ultimate treat when I was a student. Although might be slightly wrong if veganism is for health.

How about :
spicy chickpeas

1 teaspoon each of : curry, ground coriander, chili powder, ground cumin, and paprika

1/2 teaspoon each of: ground allspice, salt, and cayenne pepper

Mix with cooked chickpeas

I cooked them in a 400 degree over for around 30 minutes and they were yummy!

Or : ---Apple Cinnamon Bars---

1 cup whole wheat flour

1/2 cup rolled oats

1 tablespoon ground cinnamon

1 teaspoon baking powder

1/4 cup brown sugar

2 eggwhites or 1 egg equivilent EnerG

1/2 cup soy or dairy milk

1/4 cup apple juice concentrate

1/4 cup raisins or craisins

about 1 1/4 cup chopped peeled appled



Soak the raisins in the apple juice concentrate for 30 minutes.

Spray 8" square pan with vegetable spray (or use non stick pan)

Stir together dry ingredients. Add apples and toss to coat. Stir together

all wet ingredients. Pour wet stuff into the dry, fold together just to

evenly moisten the dry ingredients. Spread this thick batter into the

prepared 8" pan, bake at 350 degreed F for 20 minutes.

I'm very sorry for tempting you, but it seems to have disapeared! I know it invloved malt extract at some stage! And usually a broken up bar of Maya gold.

Although you can just buy egg subsitute at health food shops and use that in a normal recipe.

Am fine lass - just contemplating whether to do the local 10K this coming Friday evening - it's a fairly late start (7:30pm) which means finish by about 9:00ish, home for a shower, etc, and get something to eat.

And then I have to decide whether to go out that night to rave it up slightly.

Can I manage a 10K and a night out tripping the light fantastic? Is it dangerous to drink alcohol so soon after a run? LOL - will probably find out if I do it!

i'd like to second FB's suggestion - madhur's eastern veg cookery is very good. lots of the recipes are really simple but very tasty. i love bengali tomatoes, cauli steamed with whole spices, tofu in a deliciously spicy sauce, delicously spicy chick peas - i could go on and on. there's alos quite a bit of info about ingredients and foody tales about her family.

anna thomas' books are also quite good - again they are veggie rather than vegan but still have many vegan recipes.

some other ones from that Madhur book

green beans with coconut
beetroot and tomatoes (whatever you do do NOT spill on white shirts - also has turmeric in it!)
courgettes, stuffed with spicy bulgar wheat, and hot yoghurt sauce

am not veggie or vegan but I do like good veggie food
