TB - Creamy tomato soup recipe as taken from M+S Kids Cookery book 2001. For 4 people (I double all the following). 1 Onion finely chopped, 2 Tbsp Olive oil, 1 tin of chopped tomatoes (I also chop up real toms and add), 1/2 tsp of caster sugar, 200 mls veg stock, 1 bay leaf, 2 tbsp mascarpone cheese, 1 handful of fresh basil leaves ( I didn't have any so this was missing from my soup...maybe that's why I lost), salt and pepper ( I also omitted seasoning) and 2 tbsp of fresh cream ( I missed that out too! no wonder my soup lost).
Peel and chop the onion into small chunks. Cook Onion in saucepan with oil until soft. Add chopped tomatoes, sugar and stock. Drop in bay leaf and let all cook gently for 15 mins. Take pan off heat and add mascarpone and basil leaves. Simples...
