Stilton, celery and spring onion pate

Ready in minutes, this tasty starter or snack is the perfect way to get your Christmas cheese fix. A small piece of stilton (just 30g) provides a seventh of your daily-recommended calcium intake, which is essential for runners to protect against stress fractures and osteoporosis. You can freeze this paté if you don't want to use it all or thin it down with a little milk to create a tasty dip.

Serves: 8

  • 200g Stilton cheese
  • 200g low fat soft cheese
  • 2 tbsp low fat Greek-style yogurt
  • 1 celery stick, finely chopped
  • 2 spring onions, trimmed and finely chopped
  • 2 tsp fresh thyme leaves or chopped fresh parsley
  • freshly ground black pepper
  • salad leaves or fresh herbs, to garnish

1 Crumble the stilton into a mixing bowl, then mash with a fork. Add the low fat soft cheese and yogurt, combining them together to make a semi-smooth paté.

2 Add the celery, spring onions and thyme or parsley. Season with a little black pepper, then serve with oatcakes, water biscuits or melba toast, garnished with salad leaves or fresh herbs.
