Spiced apple cookies

Rich with spices and blackstrap molasses, these crowd-pleasing cookies are studded with chunks of apple for added sweetness. They’re vegan-friendly too!


Why are these great for runners?

Wholewheat flour has over twice as much fibre as white flour, which will help your digestive system function properly.

Molasses is absolutely packed with minerals, including calcium – essential for strong bones – and iron, which can help ward off fatigue.

Apples are a source of vitamin C, a must-have for protecting cells and healing wounds.


Spiced apple cookies

Makes 16

1 tbsp ground flaxseed

125g coconut oil or butter

150g molasses (we used Meridian pure blackstrap molasses)

150g self-raising flour

100g plain wholewheat flour

½ tsp baking powder

1 tbsp ground cinnamon

2 heaped tsp mixed spice

1 apple, peeled and finely diced

1.    Preheat your oven to 180°C/350°F/Gas Mark 4. Line and grease two medium-sized baking tins.

2.    Place the ground flaxseed in a small bowl with three tablespoons of water. Stir and leave to stand.

3.    Thoroughly mix the coconut oil or butter with the molasses. Sift in the flours, baking powder and spices, and stir together.

4.    Add the flaxseed mixture and apple pieces then combine thoroughly.

5.    Take tablespoons of the mixture and form into cookie shapes with your hands. Space evenly on the baking trays and cook for 15-20 minutes.
