Kicking off your day with a hit of protein is a must for runners. Not only will it help repair your hard-working muscles, but it'll keep you full right up until lunch. These protein pancakes, created by Fresh Fitness Food nutritionist Georgia Bellas, will do the trick - plus you'll pack in a serving of fruit as well!
30g vanilla whey protein
1 tsp baking powder (gluten-free if necessary)
50g flour (gluten-free if necessary)
50ml almond milk
Coconut oil, to cook
2 tbsp quark
20g strawberry whey protein powder
Fresh fruit salad (use seasonal fruits of your choice)
2 tbsp chopped nuts
1/ Blend the egg, vanilla whey protein, baking powder, flour, almond milk and banana together until smooth.
2/ Heat a non-stick pan and brush with coconut oil.
3/ Using a ladle, spoon the batter mix into the heated pan, cook until small bubbles appear on the surface and flip to cook the other side.
4/ Whip the fresh raspberries, strawberry protein powder and quark together.
5/ Pour quark mix over the pancakes and fresh fruit, top with the chopped nuts.
