Walnut and maple syrup granola bars

Ditch the stale offerings of the biscuit tin during coffee breaks and enjoy an altogether more nutritious snack with these granola bars. Packed with healthy fats, they’re a much more satisfying way to get you through to lunchtime!


Why are these great for runners?

Maple syrup is a natural sweetener and has 35% fewer calories than regular sugar.

Walnuts are rich in copper, which helps produce blood cells and form haemoglobin to carry oxygen around the body – essential for upping your VO2 max.

Ground flaxseeds are packed with the omega-3 fatty acid ALA, which targets harmful free radicals, and phosphorus, which strengthens bones.


Walnut and maple syrup granola bars

Makes 16

100g coconut oil

200g oats

150ml maple syrup

75g walnuts

2 tsp ground cinnamon

30g ground flaxseeds

1. Preheat your oven to 180°C/350°F/Gas Mark 4. Line and grease a medium-sized baking tin.

2. Place the coconut oil in a glass bowl and melt with short blasts in the microwave. Add the rest of the ingredients and stir thoroughly.

3. Transfer the mixture to the baking tin and push down firmly. Bake for 20-25 minutes or until golden brown around the edges. Remove and leave to cool in the tin.
