Recipe: Gooey Date Bars


• 8 tbsp honey
• 5 tbsp fat-free plain yogurt
• 3 tbsp canola oil
• 1 Omega 3-enriched egg
• 1½ tsp vanilla extract
• 85g chopped, pitted dates
• 65g old-fashioned oats
• 60g whole wheat flour
• 35g ground flaxseed
• 30g chopped walnuts
• ½ tsp baking soda
• ½ tsp ground cinnamon
• Pinch of salt

1. Preheat the oven to 350ºF. Coat a 20 x 20cm baking tray with a thin layer of oil. Using a fork or whisk beat the honey, yogurt, oil, egg and vanilla in a bowl until smooth.
2. Toss the dates, oats, flour, flaxseed, walnuts, baking soda, cinnamon and salt in another bowl. Add this mixture to the batter. Stir to combine.
3. Dollop the mixture into the prepared tray and spread evenly.
4. Bake for 25 minutes or until the top is browned and a wooden pick inserted into the centre has moist crumbs clinging to it when it’s removed. It’s vital that you do not overcook the mixture.
5. Remove the tray to a rack and allow the mixture to cool. Cut into 16 squares. Serve.
